HOW TO MAKE FREID RICE

  • Prepare the Rice:

    • If your rice is freshly cooked, spread it out on a baking sheet and let it cool slightly. Cold rice works better for fried rice as it’s less sticky.

  • Cook the Eggs:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

    • Pour in the beaten eggs and cook, stirring occasionally, until scrambled and just set. Remove the eggs from the skillet and set aside.

  • Sauté the Aromatics:

    • Add the remaining tablespoon of vegetable oil to the skillet.

    • Add the chopped onion and cook until it becomes translucent.

    • Add the minced garlic and cook for another minute until fragrant.

  • Add the Vegetables
    :

    • Add the mixed vegetables to the skillet and cook for a few minutes until they’re tender.

  • Combine Everything:

    • Add the cooked rice to the skillet, breaking up any clumps with a spatula.

    • Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine.

    • Add the scrambled eggs back to the skillet.

    • If you’re using any cooked protein, add it at this point and stir to combine.

  • Finish and Serve:

    • Add the chopped green onions and stir.

    • Season with salt and pepper to taste.

    • Serve hot, garnished with additional green onions if desired.
