HOW TO MAKE FREID RICE
Prepare the Rice:
If your rice is freshly cooked, spread it out on a baking sheet and let it cool slightly. Cold rice works better for fried rice as it’s less sticky.
Cook the Eggs:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Pour in the beaten eggs and cook, stirring occasionally, until scrambled and just set. Remove the eggs from the skillet and set aside.
Sauté the Aromatics:
Add the remaining tablespoon of vegetable oil to the skillet.
Add the chopped onion and cook until it becomes translucent.
Add the minced garlic and cook for another minute until fragrant.
Add the Vegetables:
Add the mixed vegetables to the skillet and cook for a few minutes until they’re tender.
Combine Everything:
Add the cooked rice to the skillet, breaking up any clumps with a spatula.
Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine.
Add the scrambled eggs back to the skillet.
If you’re using any cooked protein, add it at this point and stir to combine.
Finish and Serve:
Add the chopped green onions and stir.
Season with salt and pepper to taste.
Serve hot, garnished with additional green onions if desired.
