HOW TO MAKE RICE AND STEW

 

  • Rinse the rice thoroughly in cold water to remove excess starch.

  • In a pot, add the rice and enough water to cover it (usually, the rice-to-water ratio is 1:2).

  • Add a pinch of salt if desired.

  • Bring it to a boil, then reduce the heat to low, cover the pot, and let it simmer until the water is absorbed and the rice is tender (about 15-20 minutes).

    1. Steps for the stew

      1. Blend tomatoes, red bell peppers, Scotch bonnet, and one onion into a smooth paste.

      2. In a pot, heat oil and sauté diced onions until fragrant.

      3. Add the blended mixture and let it cook down until the excess water evaporates and the sauce thickens.

      4. Add your seasoning and spices to taste.

      5. If using protein, cook it separately, then add it to the stew, allowing it to simmer and absorb the flavors.

      6. Taste and adjust seasoning as needed.
